This easy ground turkey soup is hearty, healthy, and super cozy. Packed full of protein, vegetables, and the perfect blend of seasoning, this is a recipe you’ll want to put on your dinner rotation.
My 10 year old tells it to me straight. “But, ground turkey just doesn’t taste like anything.”
And I totally agree. Turkey isn’t my favorite protein choice. It has a mild flavor and can often taste bland in recipes where people swap ground beef or pork for turkey, but leave all the rest of the seasoning and spices the same.
But turkey is a great choice – especially if you’re counting macros!
So you’ll find plenty of turkey recipes on this blog, like my turkey meatloaf. Turkey can be delicious, it just takes a bit more seasoning than other ground meats. Keeping that in mind, I’ve added a nice kick of flavor to this ground turkey soup with some of my favorite seasonings.
Ground Turkey Soup Ingredients
This turkey soup is perfect for lazy days. There’s very little hands-on cooking and it basically just simmers on the stove and cooks itself while you do more important things like putting up your feet and catching up on your favorite Netflix show.
We use a bunch of short cuts to make this ground turkey soup – like a bag of frozen vegetable mix, store-bought chicken broth, and canned tomatoes.
To make this ground turkey soup with vegetables, you’ll need:
- Ground turkey, cooked and drained
- Chicken stock
- Garlic and onion
- Olive oil
- Canned tomatoes
- Bag of frozen mixed vegetables
- Pasta – use your favorite small-shaped pasta
- A few basic spices and seasonings
How To Make Ground Turkey Soup with Vegetables
Step 1: You’ll start by browning your turkey and draining off any fat. Once cooked, set it aside.
Step 2: I prefer to cook my pasta separately and then add the cooked pasta to the soup pot. I find it makes the ground turkey soup less starchy. If you prefer it that way too, now is the time to get some water boiling for your pasta.
Step 3: Heat a large soup pot over medium – high heat. Add in your olive oil, and once hot, add in chopped onion and garlic and cook until soft.
Step 4: Add in your spices, canned tomatoes (including the juice), and chicken stock. Then, add your cooked turkey. Season with salt and pepper.
Step 5: Bring to a boil and simmer gently for at least 20 minutes. Go change over the laundry.
Step 6: Then, add in your frozen mixed vegetables and return to a boil.
Step 7: Continue cooking for about 10 minutes, or until the veggies are soft. Add in your pasta to the ground turkey soup and simmer for another minute.
FAQ
Why does my turkey soup taste bland?
Turkey has a very mild flavor, so you need to make sure you’re adding enough spices and seasoning to kick up the flavor. My ground turkey and vegetable soup has plenty of spices so you don’t have to worry about it tasting bland.
Why use ground turkey instead of ground beef?
I like to use ground turkey because it is lower in saturated fat than beef, which can make it a better choice for heart health.
Can you freeze ground turkey soup?
Yes! To freeze this soup, make sure you’ve allowed it full cool down. I like to freeze in glass 2-cup containers. Just make sure you leave at least a half-inch of space in the container to account for the soup to expand as it freezes.
Ground Turkey Soup with Vegetables
Ingredients
- 1 lb (454g) ground turkey
- 1 cup (112g) dried pasta, small shape
- 2 tsp (8g) olive oil
- 1 med (170g) onion, chopped
- 4 (15g) garlic cloves, chopped
- 14.5oz (411g) canned diced tomatoes
- 64 oz chicken stock
- bag (340g) frozen mixed vegetables
Spices
- 1 tsp oregano
- 2 bay leaves
- 1 tsp thyme, dried
- 1 tsp basil, dried
- pinch red pepper flakes, optional
- salt and pepper, to taste
- parsley, optional
Instructions
- Start by browning your ground turkey, and cooking your dried pasta. Set aside
- Place a large soup pot over medium-high heat. Add olive oil.
- Once oil it hot, add in chopped onion and garlic. Cook until soft, about 5 minutes, stirring occasionally.
- Add in your spices (oregano, thyme, basil, bay leaves, and red pepper flakes if using)
- Add in your canned diced tomatoes, including any juice.
- Pour in your chicken stock and season with salt and pepper. The amount of salt depends on your personal preference and on how salty your chicken stock is. I'd suggest between 1/2 tsp to 1 tsp of salt.
- Add in cooked ground turkey and bring mixture to a boil.
- Continue cooking for at least 20 minutes.
- Add in frozen veggies and return to a boil. Cook another 5 – 10 minutes.
- Stir in your cooked pasta, and sprinkle in parsley, if using.
