
We all need easy-peasy recipes in our repertoire that ALWAYS hit the spot. And this air fryer stuffed chicken breast is that easy dinner for my family. I always seem to have the ingredients on hand. Chicken breast. Ham slices. Cheese. (I love a Colby-jack, but use whatever cheese you love or have on hand – it all works!) A few basic spices. That’s it for this stuffed chicken breast with ham and cheese!
My air fryer stuffed chicken breast looks fancy enough to serve at a dinner party, but is quick enough to throw together before you’re rushing out the door to take the kids to all their sports and activities.
Don’t let the minimal spice list surprise you, because this stuffed chicken breast with ham and cheese has a TON of flavor. Honestly, I’m surprised that it tastes so good considering just how healthy it is.

This recipe is a great for counting macros, too! One serving of this air fryer stuffed chicken breast has 296 calories, 46 grams of protein, but only 4.5 grams of carbs, and 10 grams of fat!

So this recipe for my stuffed chicken with ham and cheese is pretty simple. You start with some chicken breast. I love to get all my meat from Butcher Box! The chicken breasts I get are LARGE so I like to slice my in half horizontally.

Next, I suggest placing a piece of plastic film over top and lightly pounding so that the chicken is uniform in thickness. You don’t HAVE to do this, but I think it helps the chicken cook more evenly.

Now comes the fun part! Take a filet knife, and cut a slit into each chicken breast. You’ll want to make a little pocket flap. That’s where the ham and cheese will go.

Ok, I promise all the hard steps are over. From here on out, this air fryer stuffed chicken breast recipe is easy-peasy!

Sprinkle on your seasoning mix and gently massage into both sides of your chicken breast.

Top with dijon mustard. I don’t recommend yellow mustard because it has a stronger, tangier flavor. Dijon is a milder, more creamy mustard and it is SO GOOD with ham.

Spread the mustard onto the top of the chicken. My husband uses his fingers, but I use a pastry brush. You do you.

Next, for our ham and cheese. You can use any kind of cheese you like. I personally love a Colby-jack because of the flavor and meltyness, but I’m sure it’d be delicious with cheddar or Swiss or even pepper jack. Typically, I like to buy blocks of cheese and slice/grate/shred as needed because I’m high maintenance, but you can use pre-sliced or even shredded cheese.

I recommend placing the cheese inside the ham and then folding it. I find that this protects the cheese from just melting out of the chicken as it cooks.

Then, you just put the ham and cheese roll-up into your little chicken pocket.

For the crunchy topping, I love to use crushed up corn flakes. They are gluten free, and get nice and crunchy when air fried.
I like to use a mortar and pestle to crush the corn flakes, but you can also place them in a plastic sandwich bag and use a rolling pin.

Then, add a little smoked paprika to your corn flake crumbs.

Sprinkle the crumb mixture on top of the chicken and gently press into the mustard.

Then, lightly spray the top with oil, and air fry at 375 degrees for 10-12 minutes or until internal temperature is 165 degrees.

Mmmmm chicken breast stuffed with ham & cheese is delicious.

Air Fryer Stuffed Chicken Breast with Ham And Cheese
Ingredients
- 1 large (300 g) Chicken breast
- 1/4 tsp sea salt
- 1/4 tsp freshly ground pepper
- 1/4 tsp garlic powder
- 2 tbsp dijon mustard
- 2 slices (40 g) Colby-jack cheese
- 4 slices (112 g) ham
Crunchy Topping
- 1/4 tsp smoked paprika
- (10 g) corn flakes
- spray oil
Instructions
- Slice chicken breast in half. If needed, lightly pound each half until they are about even in thickness.
- Using a filet knife, cut a slit in each half of chicken, to make a little pocket opening.
- Season both sides of your chicken with salt, pepper, and garlic powder. Use your hands to lightly massage the seasoning into the chicken.
- Lay two slices of ham, and place cheese slice on top. Fold ham around the cheese, and place inside the chicken flap.
- Add dijon mustard to the top of your chicken, and using either your fingers or a pastry brush, evenly spread all over the top.
- Finely crush your corn flakes. I like to use a mortar and pestle, but you can also place the cereal in a plastic sandwich bag and roll with a rolling pin.
- Add the smoked paprika to your corn flakes.
- Sprinkle seasoned crumbs over the top of the chicken, lightly pressing into the dijon mustard.
- Spray the top of your chicken lightly with a cooking spray.
- Air fry at 375 degrees for 10- 12 minutes until cooked through (or internal temp reaches 165 degrees)
