Ingredients
  

  • 1 lb (454g) ground turkey
  • 1 cup (112g) dried pasta, small shape
  • 2 tsp (8g) olive oil
  • 1 med (170g) onion, chopped
  • 4 (15g) garlic cloves, chopped
  • 14.5oz (411g) canned diced tomatoes
  • 64 oz chicken stock
  • bag (340g) frozen mixed vegetables

Spices

  • 1 tsp oregano
  • 2 bay leaves
  • 1 tsp thyme, dried
  • 1 tsp basil, dried
  • pinch red pepper flakes, optional
  • salt and pepper, to taste
  • parsley, optional

Instructions
 

  • Start by browning your ground turkey, and cooking your dried pasta. Set aside
  • Place a large soup pot over medium-high heat. Add olive oil.
  • Once oil it hot, add in chopped onion and garlic. Cook until soft, about 5 minutes, stirring occasionally.
  • Add in your spices (oregano, thyme, basil, bay leaves, and red pepper flakes if using)
  • Add in your canned diced tomatoes, including any juice.
  • Pour in your chicken stock and season with salt and pepper. The amount of salt depends on your personal preference and on how salty your chicken stock is. I'd suggest between 1/2 tsp to 1 tsp of salt.
  • Add in cooked ground turkey and bring mixture to a boil.
  • Continue cooking for at least 20 minutes.
  • Add in frozen veggies and return to a boil. Cook another 5 - 10 minutes.
  • Stir in your cooked pasta, and sprinkle in parsley, if using.
