Today, I’m sharing my recipe for our moist and flavorful mushroom turkey meatloaf. This gluten-free turkey meatloaf is packed with umami flavor and always hits the spot!
Growing up, my family never cooked meatloaf. And the first time I tried a bite, at a local restaurant, I was hooked. I just couldn’t get enough of that sweet glaze. I feel like meatloaf can be a little controversial. Some people love it (like me) and others hate it.
Over the years, I’ve sampled different types of meatloaf. I’ve had ground beef and ground turkey versions. I’ve tried meatloaf that was glazed with ketchup, glazed with bbq sauce, glazed with cranberry sauce, and even glazed with honey mustard. And, I’ve tried meatloaf that was covered in brown gravy, tomato sauce, and even in a red enchilada sauce.
It’s all delicious if you ask me.
This healthier take uses ground turkey. I think turkey can often be a little lacking in flavor, especially compared to ground beef, so I made sure to kick up the flavor profile. I use sautéed mushroom and onion to add a nice umami flavor and keep the meatloaf moist, and top with a tangy and sweet glaze. You’re going to LOVE this mushroom turkey meatloaf!
Mushroom Turkey Meatloaf Notes:
A few notes before we start. I love using oats instead of bread crumbs or crushed up crackers, because oats are gluten-free and also have more protein than bread crumbs.
Since ground turkey can be a little bland, I like to season my mushroom turkey meatloaf with a mix of salt, dried thyme, paprika, freshly ground pepper, and mustard.
I also love adding mushrooms. They add a nice umami flavor to the loaf, and also help keep the ground turkey moist as it cooks. I like to sauté my mushrooms, garlic, and onion to soften and slightly cool before adding to my meatloaf mix.
I also recommend mixing the rest of the meatloaf ingredients FIRST, before gently adding in the ground turkey. Overmixing ground meat can make meatloaf (or meatballs, etc) tough. By throughly mixing the spices and filling before adding in the turkey, you make sure all that yummy flavor is well incorporated.
Once the filling is mixed, add in the ground turkey and mix gently. Shape your meatloaf into an oval loaf and place on a parchment-lined baking sheet.
Mix together the glaze ingredients and generously coat the top of your mushroom turkey meatloaf. For the sugar-free bbq sauce, I like to use this one. It’s easy to find at most grocery stores.
Once baked, I like to wait about 10 minutes before cutting the mushroom turkey meatloaf into thick slices. If you slice while the loaf is still piping hot, sometimes the slices can fall apart.
I love serving this gluten-free turkey meatloaf with some mashed potato (or mashed cauliflower) and skillet green beans. Serve a little extra sugar-free bbq sauce on the side!

Mushroom Turkey Meatloaf (Gluten-Free)
Ingredients
- 2lbs (908 grams) lean ground turkey
- 1 /2 cup (125 grams) white onion, finely chopped
- 3 cloves garlic, finely chopped
- 1 container (125 grams) white mushrooms, finely chopped
- spray oil
- 1 cup parsley, finely chopped
- 1 cup (90 grams) oats
- 1/2 cup (80 grams) milk
- 2 eggs, lightly beaten
- 1 tbsp (25 grams) yellow mustard
- 1.5 tsp sea salt
- 1 tsp dried thyme
- 1 tsp paprika
- 1/4 tsp ground black pepper
Glaze topping
- 1/2 cup (100 grams) sugar-free bbq sauce
- 1 tbsp (25 grams) yellow mustard
Instructions
- Place a 12-inch skillet over medium-high heat. Spray with spray oil.
- Add chopped mushroom, onion and garlic and sauté until mushrooms have released their liquid and onion is translucent. Set aside to cool for a few minutes.
- In a large glass bowl, mix together oats, milk, parsley, mustard, spices, beaten eggs, and cooled mushroom mixture.
- Add ground turkey to mixture. Using hands, gently mix until all ingredients are well combined.
- Shape into a loaf shape and place on a parchment-lined baking sheet.
- In a small bowl, mix together sugar-free bbq sauce and mustard. Spoon over the top of the meatloaf.
- Bake at 375 degrees for 55-60 minutes, or until meatloaf reaches 165 degrees.
