Slice chicken breast in half. If needed, lightly pound each half until they are about even in thickness.
Using a filet knife, cut a slit in each half of chicken, to make a little pocket opening.
Season both sides of your chicken with salt, pepper, and garlic powder. Use your hands to lightly massage the seasoning into the chicken.
Lay two slices of ham, and place cheese slice on top. Fold ham around the cheese, and place inside the chicken flap.
Add dijon mustard to the top of your chicken, and using either your fingers or a pastry brush, evenly spread all over the top.
Finely crush your corn flakes. I like to use a mortar and pestle, but you can also place the cereal in a plastic sandwich bag and roll with a rolling pin.
Add the smoked paprika to your corn flakes.
Sprinkle seasoned crumbs over the top of the chicken, lightly pressing into the dijon mustard.
Spray the top of your chicken lightly with a cooking spray.
Air fry at 375 degrees for 10- 12 minutes until cooked through (or internal temp reaches 165 degrees)
