
I’m so excited to share our family-favorite skillet pork chops recipe with you today! My pan-seared pork chops with dijon mustard sauce recipe is quick, easy, and has FANTASTIC macros! This recipe is elegant enough to serve to guests, and simple enough to throw together on a Tuesday night before shuttling the kids off to their various activities. This pan-seared pork chops recipe is definitely a “recipe for REAL LIFE.”
I’m a huge fan of thin cut, boneless pork chops. I can usually find them for a great price at my local Costco, and they are so quick to prepare. Served with a creamy dijon mustard sauce, and your favorite sides, you won’t believe you’re eating healthy.
Pan-seared Pork Chops Ingredients

Pork Chops
For pan-seared pork chops, you want to make sure you’re using thinly-cut, boneless chops. Thick-cut, or bone-in pork chops take longer to prepare in a skillet, and I really prefer those cuts in an air fryer instead.

Homemade Spice Rub
I made a homemade spice rub for my pork chops. I used a mix of salt, paprika, dried thyme, and garlic powder. These are basic spices that I always have on hand, but when you mix them together – it’s a total flavor bomb. I only used 1/4 tsp of salt in my pork chop rub because dijon mustard does have quite a bit of salt. I recommend very lightly salting the pork, and then once you’ve simmered your creamy dijon mustard sauce, tasting and adding more if needed.

Dijon Mustard
For the dijon mustard sauce, it’s very important to use a DIJON mustard. Please do not substitute yellow mustard or whole grain mustard or honey mustard. It won’t work/taste the same. The flavor of dijon mustard works so perfectly with these pan-seared pork chops!
Chicken Stock/Milk
The only other ingredients are a bit of chicken stock to deglaze the pan (you can use water or white wine if you don’t have chicken stock on hand) and just a splash of milk to thin the sauce and add to a creamy feel. I used a 2% milk, but you can also skim or whole milk.
Pan-seared Pork Chops Recipe Instructions

First, you’ll want to mix together garlic powder, paprika, salt, and dried thyme to make a spice rub for your pork chops.

Take your spice mix and gently massage onto all sides of the pork chop.

Heat a stainless steel skillet over medium-high heat and drizzle in some olive oil. Lay the pork chops in a single layer and cook for about 2 minutes.

Flip and continue cooking for another 2 minutes. You should see a nice char on both sides. Then set pork chops on a separate plate.

In the same skillet, add chicken stock to deglaze the pan, using a wooden spoon to scrape up the browned bits. Mmmmm flavor! Add in the dijon mustard and milk and stir to combine.

Add the pan-seared pork chops back into the sauce and simmer until the sauce is slightly thickened, about 2 minutes.

I like to drizzle the dijon mustard sauce over the pan-seared pork chops as it simmers. Taste sauce and add more salt if needed.

Easy Pan Seared Pork Chops with Dijon Mustard Sauce
Ingredients
- 460g (1 lb) pork tenderloin chops, boneless
- 10g (2 tsp) olive oil
- 1/4 tsp salt
- 1 tsp paprika
- 1 tsp dried thyme
- 1 tsp garlic powder
- 130g (2/3 cup) chicken stock
- 28g (2 tbsp) dijon mustard
- 85g (1/4 cup) milk
Instructions
- Mix together your salt and spices, and gently rub into all sides of the pork chops.
- Heat a large stainless steel skillet over medium high heat, and add olive oil
- Once oil is shimmering, place pork chops in a single layer and cook for about 2 minutes. Flip and cook on other side for another 2 minutes, until nicely seared on both sides.
- Remove pork chops from pan, and set aside.
- Deglaze the pan by adding chicken stock and using a wooden spoon to scrape up any browned bits.
- Whisk in the dijon mustard and milk until well blended.
- Add the pork chops back in and simmer in the mustard sauce until sauce thickens slightly, about 2 minutes. Taste, and add more salt if needed.
