Ingredients

  • 460g (1 lb) pork tenderloin chops, boneless
  • 10g (2 tsp) olive oil
  • 1/4 tsp salt
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • 130g (2/3 cup) chicken stock
  • 28g (2 tbsp) dijon mustard
  • 85g (1/4 cup) milk

Instructions

  • Mix together your salt and spices, and gently rub into all sides of the pork chops.
  • Heat a large stainless steel skillet over medium high heat, and add olive oil
  • Once oil is shimmering, place pork chops in a single layer and cook for about 2 minutes. Flip and cook on other side for another 2 minutes, until nicely seared on both sides.
  • Remove pork chops from pan, and set aside.
  • Deglaze the pan by adding chicken stock and using a wooden spoon to scrape up any browned bits.
  • Whisk in the dijon mustard and milk until well blended.
  • Add the pork chops back in and simmer in the mustard sauce until sauce thickens slightly, about 2 minutes. Taste, and add more salt if needed.
