Today, I'm sharing my recipe for our moist and flavorful mushroom turkey meatloaf. This gluten-free turkey meatloaf is packed with umami flavor and always hits the spot!
Place a 12-inch skillet over medium-high heat. Spray with spray oil.
Add chopped mushroom, onion and garlic and sauté until mushrooms have released their liquid and onion is translucent. Set aside to cool for a few minutes.
In a large glass bowl, mix together oats, milk, parsley, mustard, spices, beaten eggs, and cooled mushroom mixture.
Add ground turkey to mixture. Using hands, gently mix until all ingredients are well combined.
Shape into a loaf shape and place on a parchment-lined baking sheet.
In a small bowl, mix together sugar-free bbq sauce and mustard. Spoon over the top of the meatloaf.
Bake at 375 degrees for 55-60 minutes, or until meatloaf reaches 165 degrees.
