Mushroom Turkey Meatloaf (Gluten-Free)

Today, I'm sharing my recipe for our moist and flavorful mushroom turkey meatloaf. This gluten-free turkey meatloaf is packed with umami flavor and always hits the spot!

Ingredients
  

  • 2lbs (908 grams) lean ground turkey
  • 1 /2 cup (125 grams) white onion, finely chopped
  • 3 cloves garlic, finely chopped
  • 1 container (125 grams) white mushrooms, finely chopped
  • spray oil
  • 1 cup parsley, finely chopped
  • 1 cup (90 grams) oats
  • 1/2 cup (80 grams) milk
  • 2 eggs, lightly beaten
  • 1 tbsp (25 grams) yellow mustard
  • 1.5 tsp sea salt
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1/4 tsp ground black pepper

Glaze topping

  • 1/2 cup (100 grams) sugar-free bbq sauce
  • 1 tbsp (25 grams) yellow mustard

Instructions
 

  • Place a 12-inch skillet over medium-high heat. Spray with spray oil.
  • Add chopped mushroom, onion and garlic and sauté until mushrooms have released their liquid and onion is translucent. Set aside to cool for a few minutes.
  • In a large glass bowl, mix together oats, milk, parsley, mustard, spices, beaten eggs, and cooled mushroom mixture.
  • Add ground turkey to mixture. Using hands, gently mix until all ingredients are well combined.
  • Shape into a loaf shape and place on a parchment-lined baking sheet.
  • In a small bowl, mix together sugar-free bbq sauce and mustard. Spoon over the top of the meatloaf.
  • Bake at 375 degrees for 55-60 minutes, or until meatloaf reaches 165 degrees.
