Ingredients

  • 1 cup (120g) self-rising flour (NOT all-purpose flour) + additional for dusting.
  • 1 cup (225g) plain, nonfat Greek yogurt
  • 1/4 tsp garlic powder, optional
  • 1/4 tsp salt
  • 2 tsp dijon mustard, optional
  • 5oz (140g) ham, chopped
  • 1/2 cup (56g) cheddar cheese, shredded
  • 1 whole egg, for egg wash

Instructions

  • Dice up your ham and put it in a small bowl. Add in your shredded cheese and mix gently. Set aside.
  • In a medium bowl, mix together self-rising flour, salt, greek yogurt, and garlic powder with a wooden spoon until a shaggy dough forms.
  • Using clean hands, knead dough for 2 minutes until you have a smooth dough ball.
  • Divide into 4 portions and roll each piece out to approximately 6x10inch oval.
  • Brush 1/2 of each rolled out dough with mustard.
  • Sprinkle 1/4 of the ham and cheese mixture on top of the mustard-coated half.
  • Fold over and press the edges to seal. Repeat until all 4 pieces are folded over and sealed.
  • To make your egg wash, whisk together one whole egg + a splash of cold water in a small bowl.
  • Brush hot pockets with egg wash and bake at 400 degrees for 18-20 minutes
