1 cup(120g)self-rising flour (NOT all-purpose flour) + additional for dusting.
1 cup (225g)plain, nonfat Greek yogurt
1/4tsp garlic powder, optional
1/4tsp salt
2tspdijon mustard, optional
5oz (140g)ham, chopped
1/2 cup(56g)cheddar cheese, shredded
1wholeegg, for egg wash
Instructions
Dice up your ham and put it in a small bowl. Add in your shredded cheese and mix gently. Set aside.
In a medium bowl, mix together self-rising flour, salt, greek yogurt, and garlic powder with a wooden spoon until a shaggy dough forms.
Using clean hands, knead dough for 2 minutes until you have a smooth dough ball.
Divide into 4 portions and roll each piece out to approximately 6x10inch oval.
Brush 1/2 of each rolled out dough with mustard.
Sprinkle 1/4 of the ham and cheese mixture on top of the mustard-coated half.
Fold over and press the edges to seal. Repeat until all 4 pieces are folded over and sealed.
To make your egg wash, whisk together one whole egg + a splash of cold water in a small bowl.
Brush hot pockets with egg wash and bake at 400 degrees for 18-20 minutes
