Big Mac Casserole (Cheeseburger and French Fry Casserole)
Craving some Mickey D's but don't want to splurge on the calories? Enter my Big Mac casserole. All the classic flavors you crave in one convenient "cheeseburger and french fry" casserole.
In a small bowl, mix together all the special sauce ingredients. Refrigerate so all the flavors have a chance to meld together while you make the rest of the casserole.
Preheat oven to 375 degrees.
Finely dice your potatoes, about 1/4 inch dice. Add to your baking dish.
Spray potatoes lightly with cooking spray and generously season with salt and pepper. Potatoes need more salt than you might think, I added 1/2 tsp of salt and 1/4 tsp of pepper. Give it a good stir to coat and put in the oven to parbake while you cook the ground beef.
In a large skillet over medium heat, add the lean ground beef and onions.
Season with salt and pepper.
Cook, crumbling the beef as you go until the meat is no longer pink and onions are soft.
Because we are using lean ground beef, there should not be any fat to drain. If you are using a higher fat ground beef, drain off any excess grease.
Add in the garlic powder, ketchup, mustard and 1/4 cup of water. Stir and simmer for 1 minute.
Add in the chopped pickles, and give it a good stir.
Using pot holders or an oven mitt, carefully removed the potatoes from the oven. They should be al dente - mostly tender.
Layer the ground beef mixture on top of the potatoes and top with the cheese.
Bake until cheese is melted and potatoes are soft. (About 15-20 more minutes)
Remove casserole from oven, and top with your favorite burger toppings. Drizzle on the special sauce and serve immediately.
