Today, I'm sharing a recipe for my easy Greek chicken meatballs. A few years ago, we took our little one to Greece, and she fell in love with the flavors. This Greek chicken meatball recipe brings in all the Greek flavors, but comes together quickly, is great for meal prep, and is family-friendly. Who doesn't love a meatball?
Preheat oven to 400 degrees. Line a large sheet pan with parchment paper.
Place ground chicken in a large bowl. Add in herbs, spices, lemon zest, onion
Using your hands, gently mix until all ingredients are well incorporated.
Shape mixture into 24 meatballs (Approximately 40g each).
Add meatballs to half of the sheet pan, leaving a bit of space around each one, and set aside.
In another bowl, add your cubed potatoes, chopped bell peppers, olive oil, spices, and lemon juice. Stir gently to combine.
Add the potato mixture to the other half of the baking sheet, spreading out to s single layer.
Bake at 400 degree for 25 minutes, shaking pan halfway through. (Or using tongs to move the meatballs)
Broil for 3-4 minutes to give the meatballs a nice color and to lightly char the bell peppers and crispy up the potatoes.
Serve alongside a quick greek salad and with a side of tzatziki
