Cowboy Baked Beans with Ground Beef

Everyone loves my cowboy baked baked beans with ground beef. Full of protein and fiber, barbecue baked beans and ground beef makes a hearty meal.

Ingredients
  

  • 1 lb (454g) lean ground beef (I used 94% lean)
  • 1/2 large (100g) onion, finely diced
  • Whole (150g) bell pepper, finely diced
  • 2 each (27.5oz) cans, baked beans (I used zero sugar added beans)
  • 1/4 cup (64g) barbecue sauce (I used no sugar added sauce)
  • 1/4 cups (45g) brown sugar (or sub brown sugar substitute, maple syrup, or sugar free pancake syrup)
  • 1 tsp (5g) yellow mustard
  • 1/2 tsp salt
  • 1 tsp garlic powder
  • 2 tsp (9g) olive oil

Instructions
 

  • Place a large skillet or large pot over medium-high heat.
  • Once hot, add in 2 tsp of olive oil, diced onions and diced bell pepper.
  • Cook, stirring often, until onions and peppers are soft, about 5 minutes.
  • Add lean ground beef and crumble and cook until well browned. If you used a higher fat ground beef, drain off any excess fat.
  • Add in spices and mustard and cook for 1 minute.
  • Add in both cans of baked beans, barbecue sauce and brown sugar. Give everything a good stir. Taste and add in more spices or brown sugar if desired.
  • Pour baked beans and ground beef mixture to a large baking dish and bake for 45 minutes at 350 degrees.
